AMARONE DELLA VALPOLICELLA CLASSICO D.O.C.G. – VIGNETO “LA PERMUTA”

Characteristics:

Produced from a careful selection of red grapes typical of Valpolicella Classica, partially dried (a traditional process called appassimento) in dedicated drying chambers.

Vinification:

In the second half of January, after careful appassimento, the grapes are vinified.

The resulting must is transferred to dedicated barrels to ferment slowly on the skins for approximately 40 days.

Description

Tasting Notes:

Intense ruby red color, forest fruits and wild cherries on the nose. The palate is smooth, dry, and harmonious.

Aging:

Following the various phases of vinification, the wine rests in medium sized oak barrels for 48 months, followed by bottle aging for 6 months.

Pairing:

Optimal with wild game, fine roasted meats and aged cheeses.

Advice:

Open two hours before serving, serve at 17°-18°C (62°-65°F).
