AMARONE DELLA VALPOLICELLA CLASSICO D.O.C.G. MOSAICO

This unique wine comes from an accurate selection of Corvina Veronese, Corvinone and Rondinella grapes. After they are harvested and hand-sorted, the grapes are dried for four months in dry and well-ventilated lofts. Only in January, after the natural dehydration process has taken place, are the grapes then pressed.

This is followed by a slow fermentation in special barrels for forty days, then subsequently, the wine ages for at least one year in medium-sized barrels. The process concludes with the maturation in the bottle for no less than one year.

As for the colour, it gains a ruby-red hue.

It contains scents of liquorice, ripe cherry in alcohol, dehydrated plum, and an elegant balsamic note.

On the palate the most prevalent note is the fruity one, with an elegant acidic streak.

The structure is complex and robust, combined with a soft and persistent flavour.

It pairs particularly well with game dishes and long seasoned cheeses.
