ROSSO PASSITO I.G.T. DEL VENETO “LE FONTANELLE”

Characteristics:

A fine wine born of a blend of red grape varieties curated with respect to the production guidelines for Passito Rosso I.G.T. del Veneto. The grapes are hand-harvested and selected when fully mature, then partially dried (a traditional process called appassimento) until mid January in dedicated drying chambers.

Vinification:

After the appassimento, at the end of January, the grapes are destemmed and crushed. The resulting must is transferred to dedicated barrels to ferment slowly on the skins for approximately 40 days.

Description

Aging:

The wine is aged for 30 months in small to medium sized oak barrels, then in the bottle for another 4 months.

Tasting Notes:

Garnet red color of moderate intensity. Silky, full-bodied and palate warming. Forest fruit and wild cherry on the nose.

Pairing:

Recommended for braised and roasted meats, above all, wild game. Optimal with aged cheeses.

Advice:

Open some hours before serving, serve at 17°-18°C (62°-65°F).
